I’m Brad Redding, the proud owner of Chef’s Table, an intimate fine dining restaurant in West Malling, and No.42 Wine Bar. Throughout my career, I have had the honor of receiving numerous awards, including being recognized in the Michelin Guide, winning OpenTable’s Top Restaurant in Kent, and earning Diner’s Choice Awards across three platforms.
My culinary journey began many years ago, shaped by working under the esteemed Marcus Wareing Restaurant Group and further honed at the prestigious L'Enclume in the Lake District—a three Michelin-starred restaurant—where I was fortunate to learn from celebrated chefs Simon Rogan and Tom Barnes. These experiences instilled in me a deep appreciation for precision, creativity, and an unwavering commitment to excellence.
At the heart of my cooking philosophy is a profound passion for farm-to-table dining. I am dedicated to sustainable cooking practices, striving to lower our carbon footprint by incorporating zero-waste menus and preserving the finest local ingredients. My focus is on creating dishes that not only showcase the beauty of seasonal produce but also reflect a commitment to preserving the environment.
